When we asked him what he wanted for the holidays, Taranta’s Jose Duarte directed us to Charly Kocher. The Swiss-born Kocher trained as an engineer but worked as a chef; he owned and operated Café China in Inman Square until in closed in 2006. Since then, he’s been melding his interests and working on the Fire Grill, an ingenious contraption for cooking over open flames. The hand-crafted carbon steel stand, with a clever cantilevered design, is lightweight and easy to assemble and makes it easy as pie to cook just about anything over a fire – even a pie. With the turn of a patented screw, the mechanism can be raised or lowered to allow cooking over a roaring fire or dying embers. Easily adjustable, the frame allows for level cooking on any surface from the fireplace to the fire pit. Duarte first saw the Fire Grill in action on a camping trip – seriously, who gets to roast a duck on a camping trip? – but put one under the tree for the grilling enthusiast in your life. Hopefully they’ll thank you with lots of flame-cooked goodies.
