Knives can be very personal for a chef - sometimes it’s just about the curve of the handle or the weight of it in hand. Chef and restaurateur Frank McClelland has handled plenty of knives over the years in the kitchen at L’Espalier. He’s developed a particular fondness for the ones he has from Berti Cutlery, an artisanal workshop in Tuscany where they’ve been handcrafting knives since 1895, using techniques that have been honed over four generations. Blades are made of forged stainless steel and the handles are made of wood, Lucite, or ox horn. Each knife is made, from start to finish, by a single artisan so each and every one is like a little work of art – a very sharp little work of art.
